Banana Date Gluten Sugar Free Muffins

These are so simple and easy to prepare for the hungry 3pm rush. They take literally 5 mins to prepare, if they took any longer, I wouldn’t be making them!

Ingredients

5 Medjool Dates with seeds removed

¼ cup Boiled Water

2 ripe bananas

5 tablespoons Buckwheat Flour

3 tablespoons Olive Oil

2 teaspoons Baking Powder

1 teaspoon Cinnamon

2 Eggs

1 teaspoon Vanilla

Topping:

1 teaspoon Honey

1/3 cup Walnuts

Method:

Line your Muffin Tray with 6 Muffin Liners

Turn Oven onto Medium

In the blender, add the 5 Medjool dates and hot water. Blend this.

Then add the rest of the ingredients and blend.

Pour into the muffin trays and cook approximately 20mins – depends on your oven. Test with a skewer.

Once out of the oven, drizzle the honey on top, place walnuts on top and serve. Enjoy!
